Fresh cauliflower and pea mash

This recipe is one of my favorites, as it's quite fresh and full of flavor. It's very quick to make and you can make a huge batch, so you can use the leftover as a dip or as a cold side dish at lunch. This is plenty to serve 4 as a side dish.

All you need for the mash are the following:

  • 1 cauliflower
  • 1/2 cup of peas, defrosted
  • 1 red onion or bunch of spring onions
  • a large handful of mint, chopped
  • 1 tbsp of oil (avocado or olive oil work best)
  • 1 tsp of mustard
  • 1 tsp of garlic, freshly chopped
  • 1 tbsp of nutritional yeast, optional

 

Method

Pulse the cauliflower in a food processor or chop very small and steam until tender. Add the peas for the last 5 minutes as they don't need as much steaming. Set aside when it's cooked. You could  to mash it with a fork or leave it like this.

Chop the onion or spring onions, add this to a medium heating pan with garlic and the oil of your choice. Once fragrant, add this to the cauliflower and pea mix.

Now would be the time to mix in the mustard, some salt/ pepper to taste and the nutritional yeast, if using. This gives it a kick from the mustard and a cheesy flavor from the yeast.

Add the mint at last and some extra fresh herbs (basil, mint, chives) if you have them in the house!

In the picture I combined this with moroccan spiralized carrots, a fresh leafy green salad, roasted sweet potatoes and seared scallops.
